Cucumber and Red Pepper Salad

This is a great dish to have mixed in with a protein and spinach or protein and carb based meal. It's low in cals, filling, and just enough sweet to add some flair.

10 Minutes to Prepare and Cook



Ingredients

    3 diced cucumbers - medium length
    1 large diced red pepper
    5 tbsp of balsamic vinegar
    1 tbsp of ground mustard
    1/3 cup of diced green onions
    3 packets of Splenda


Directions

Take all ingredients and toss in a bowl and let set overnight. I portion mine into 8-200 gram servings.
