Morgan's Veggie Patties

Ingredients

    2 ounces Olive Oil
    3 Tbsp red onion(s)
    2 Tbsp diced red pepper(s)
    1 tsp diced jalapeno pepper(s)
    1 1/2 Tbsp minced garlic
    1 Tbsp diced artichoke hearts
    1 egg
    2 Tbsp seasoned bread crumbs
    1/2 tsp paprika
    1/2 tsp chili powder
    1 tsp dried oregano
    1 Tbsp parsley, fresh
    1/2 tsp crushed red pepper flakes
    1/2 tsp Ground cumin
    1/2 tsp celery salt
    1/4 tsp ground sage
    3/4 cup quick cooking rolled oats
    4 ounces canned black beans, mashed
    4 ounces canned garbanzo beans, mashed
    4 ounces canned white beans, mashed
    2 Tbsp diced black olives

Directions

In a medium saute pan over medium heat, add 1-ounce olive oil and all raw vegetables except beans. Saute until translucent. Remove and cool.

Add veggies to beans and mix thoroughly.

Add all dry ingredients along with the egg. Thoroughly mix all ingredients and form into 4 patties. Cover and refrigerate for 30 minutes.

In saute pan add 1-ounce olive oil, and cook patties 4-5 minutes per side or until cooked through.
