Fajita Quesidilla

Ingredients

    -2 whole wheat/multi-grain tortillas
    -1/4 cup diced onion
    -3 small mild peppers, diced
    -non-dairy cheese
    -olive oil
    -salt and seasoned pepper
    -1/4 cup black beans(cooked)

Directions

In a skillet drizzle olive oil and add onions and peppers. Add salt and seasoned pepper to taste. Sautee until onions are translucent. Add beans and stir for another 30 seconds or so. Remove from skillet and set aside. Add another drizzle of oil and put one tortilla in the skillet. Top with nondairy cheese (pre-made or recipe below) and sauteed ingredients. Add other tortilla on top and flip when golden brown on the one side. Toast other side till golden brown as well.

Cheese sauce:
-3/4 cup water or plain rice/soy milk
-1 1/2 tablespoons cornstarch
-pinch salt and seasoned pepper
-2 tablespoons nutritional yeast flakes

Add water to a medium saucepan and whisk in cornstarch. Turn on high heat and stir till thickened. Turn to low heat and add in the seasonings and nutritional yeast. Stir and remove from heat.
