southwestern chicken soup

Ingredients

    3/4 lb uncooked boneless, skinless chicken breast, cut into 1" cubes
    4 medium sweet potatos(about 5 inches long), peeled and cut into 1 " cubes
    1 large onion, chopped
    29 oz diced tomatos, with green chilis, undrained
    14 1/2 oz fat free chicken broth
    1 tsp. dried oregano
    1/2 tsp ground cumin
    1 1/2 cup frozen corn kernals, not thawed

Directions

Mix all ingredients except corn, in a 4 quart or larger slowcooker, cover and cook on low heat for 6 hours- (I cooked on high for 6 and it was fine)

Stir in corn and cover, cook for about 30 minutes more. yeilds 1 1/4 cup per serving
