Introduction

Vegetarian variation of "Slow Cooker Chicken Stew" Vegetarian variation of "Slow Cooker Chicken Stew"
Number of Servings: 9

Ingredients

    1 red onion, chopped
    16-oz can black beans
    16-oz can kidney beans
    16-oz corn (undrained)
    14.5 oz can diced tomatoes w/ garlic
    1 1/2 cup chopped zucchini
    1 can Companion Chai Pow Yu gluten (or other veggie-meat)
    1 jalapeno pepper, chopped and seeded
    1.25 oz packet taco seasoning

Directions

Combine all ingredients in a very large saucepan. Cook on medium heat until zucchini is soft, 20-30 minutes. Check spice and add a little hot sauce if desired. Makes 9 1-cup servings.
