Introduction

Ingredients

    1/2 c parsley (fresh)
    1/4 c pine nuts
    1 T lemon zest
    1-2 garlic cloves
    1/3 c Parmesan cheese (grated)
    2 slices whole wheat bread
    1 T butter
    1 T Extra Virgin Olive Oil
    1 T tarragon
    1 lb boneless skinless Chicken breasts
    1 c dry white wine
    2 c tomato sauce



Directions

Toast nuts on stove top and preheat non-stick skillet. Bring water for pasta to boil. Butterfly 4 chicken breasts and pound flat. In food processor, add garlic, bread (torn into pieces), cheese, parsley, lemon zest, and pine nuts. Pulse until mixture looks stuffing like. Place mixture onto chicken, roll tight, and secure with toothpicks. Add oil and butter to skillet, brown chicken on all sides. Remove from pan, add wine (scraping bottom on pan) and then tomato sauce and tarragon. Return chicken to pan and allow to simmer until cooked. Makes 4 servings. Serve over whole wheat pasta.
