5 Minute Mexican Rice and Beans



Introduction

A great way to jazz up rice! This is perfect for any side dish and only takes minutes to prepare. A great way to jazz up rice! This is perfect for any side dish and only takes minutes to prepare.
Number of Servings: 8

Ingredients

    3 cups Minute Rice
    3 cups water
    1 can diced tomatoes with green chilies, drained
    1 can black beans,. drained
    3 tablespoons fresh minced cilantro
    1 tsp cumin
    1 tsp garlic
    1 tsp salt
    1 tsp pepper
    1 tsp onion powder

Directions

Makes 8 one-cup servings

Boil water and add Minute Rice. Cover and let sit for 5 minutes.

Drain one can of diced tomatoes with green chilies and one can of black beans. Add both to a serving dish. Add in seasonings and cilantro and stir well. Add cooked rice and stir once more to fully incorporate. Enjoy!
