Frozen lunch - Red Curry Tofu

Introduction

I'm making and freezing lunches for my family. This is a vegetarian recipe that reheats well. I'm making and freezing lunches for my family. This is a vegetarian recipe that reheats well.

Ingredients

    1 bottle Trader Joe's Thai Red Curry Sauce
    1 block Trader Joe's Organic Tofu, cut into cubes
    1 bag broccoli florets
    1 yellow bell pepper, cut into strips
    1 orange bell pepper, cut into strips
    4.5 cups cooked jasmine rice

Directions

In a large microwavable bowl, add cubed tofu, broccoli florets and pepper strips. Pour sauce over ingredients. Cover tightly with plastic wrap and microwave on high for 4 minutes.

Scoop 3/4 cup rice into six reusable plastic containers (Gladware soup/salad containers work well). Mix curry ingredients to coat all with sauce. Add curry about 1/2 cup at a time to the six containers, working down the line to make sure equal amounts of tofu, veggies and sauce end up in each. Cover and freeze.

To reheat: Microwave on high for 3 minutes or until hot.
