Bacon-Feta Stuffed Chicken

Ingredients

4 boneless, skinless chicken breast (4oz each)
1/4C crumbled Feta cheese
1/4C crumbled cooked bacon
1/2t salt
1/4t pepper
2 cans (14-1/2 oz each) diced tomatoes
1T dried basil
Directions
Carefully cut a slit in the deepest part of each chicken breast. Fill with the bacon and cheese; secure with toothpicks. Sprinkle with salt and pepper. In a large skillet, brown the chicken in oil.
Drain on can of tomatoes; add to skillet. Stir in the remaining tomatoes; sprinkle with basil. Cover and simmer 10 minutes. Simmer uncovered,5-10 minutes longer, or until the chicken is no longer pink and the tomato is thickened. Yields 4 serving.
Another vaiation is to use salsa instead of canned tomatoes.

I've made it twice and it always comes out great. However, make sure to use DICED tomatoes - I used STEWED diced tomatoes the second time and the celery flavor in the stewed tomatoes was a little off in the mix. Also, I used the feta and bacon as is and NOT crumbled - must easier to stuff!! - 5/24/10
