Ingredients

    1 organic large egg
    1/4 C liquid egg substitute
    1/4 C red beans, drained and rinsed
    1/4 C chopped tomatoes
    1 TBSP onions, chopped
    1 TBSP diced jalapeno peppers
    1 low carb whole wheat tortilla
    1/4 C Kraft 2% shredded Mexican cheese

Directions

Scramble egg and egg substitute and cook in non stick skillet until almost set. Add, beans, tomatoes, onions, and japapenos and cook an additional 1 - 2 minutes. Warm tortilla in microwave on high for 30 seconds. Place egg mixture on top of tortilla and sprinkle with shredded cheese.
