Easy Chickpea Veggie Salad

Introduction

A satisfying and delicious salad full of protein, fibre and healthy fats. Very versatile - use up whatever veggies you have on hand and as many as you can fit in there for added nutritional and visual appeal! Very versatile - use up whatever veggies you have on hand and as many as you can fit in there for added nutritional and visual appeal!
Number of Servings: 6

Ingredients

    Salad:
    1 can Chickpeas, drained & rinsed
    1-2 Tomatoes, cubed
    1 small red onion, sliced/chopped
    1 sweet pepper (red, orange, yellow), chopped
    As many other veggies as you want - some suggestions: broccoli, corn, cucumbers, baby spinach, zucchini, carrots, beets, mushrooms, etc.

    Dressing:
    2 tbsp Extra Virgin Olive Oil
    *2 tbsp Balsamic vinegar
    2 cloves Garlic, crushed
    1 tbsp ground flax seed
    1 tbsp Basil

    * I love balsamic, but this might be a little strong for some people - you can use less balsamic and add in a bit of lemon juice and water to dilute it.

Directions

1. Combine all the salad ingredients into a large bowl.

2. In a small bowl or dressing shaker, combine dressing ingredients and mix well. Immediately pour over salad and toss to ensure it's evenly covered.

3. Serve immediately, or cover and refrigerate.

Great on it's own, as a side dish or a great salad topper (this recipe will yield 8 servings if used as a side dish or salad topping).
