Parmesan pepper boats

Introduction

Number of Servings: 4

Ingredients

    1/2 cup sour cream fat free
    1 lg egg
    8 tbl grated parmesan cheese
    1 -10 pkg frozen chopped broccoli thawed and
    squeezed dry
    1 tsp dried basil
    1/4 tsp black pepper or to taste
    2 medium size green peppers halved lengthwise, seeds and membrances removed.

Directions

Heat oven to 350 degrees. Lightly grease and 8 -inch square pan. Beat sour cream and egg in medium size bowl. Add parmesan, broccoli, basil and black pepper. Stir until blended. Place pepper halves in prepared pan. Fill each with broccoli mixture. Bake 30 min or until peppers are fork tender and filling is hot. Serve immediately; or cool, cover and refrigerate up to 2 days. Bring to room temp before serving. makes 4 servings.
