Curry Rice and Beans

Introduction

Easy enough- just add whatever you want and play around with different spices. Easy enough- just add whatever you want and play around with different spices.
Number of Servings: 6

Ingredients

    1 c. Brown Basmati Rice
    1/2 c. lentils
    1/2 c. split peas
    2 small red potatoes, cubed
    1/4 onion, chopped
    1 c. canned navy beans
    5 c. water
    1 tbsp Curry Powder
    salt and pepper to taste

Directions

1. Put water and rice in a pot on stove on high.
2. Add potatoes, onion, peas, lentils, and seasoning and boil.
3. Reduce heat to simmering, add navy beans, and cook for 45 minutes, or when rice is fully cooked.

Makes 6 1-cup servings.
