Oatmeal Pancakes

Introduction

Lots of fiber! Lots of fiber!
Number of Servings: 6

Ingredients

    DRY:
    1 1/4 cups whole wheat flour
    1 cup rolled oats, quick or old fashioned
    1/4 cup wheat germ
    2 T chopped walnuts or sunflower seeds
    4 t baking powder
    1 T sugar
    1/4 t baking soda
    1/4 t salt (opt.)
    1/8 t cinnamon
    1/8 t nutmeg
    1/8 t ground cloves

    WET:
    1 cup nonfat milk
    1/2 cup buttermilk
    1 egg
    1egg white
    1 T oil
    1/2 banana, mashed
    1 cup blueberries
    1 t vanilla

Directions

Serving size = 3 pancakes, each from 1/4 cup batter.

Mix dry ingredients together in bowl. In separate bowl, mix wet ingredients together. Mix wet into dry, stir until just combined. Drop by 1/4 cups onto warm griddle. Serve with fat free yogurt and dollops of apple butter.
