Shepard's Pie

Number of Servings: 6


    4 Large Red Potatoes
    1 lb ground beef, leanest possible
    2 tbsp Smart Balance, 37% Light Margerine
    1/2 cup reduced fat parmesan cheese
    1/2 tsp nutmeg (or to taste)
    1/4 tsp black pepper (or to taste)
    1/2 tsp garlic powder
    10 oz package of shredded carrots or shred whole carrots to that equivalent
    10 oz of fat free beef broth
    1/2 tsp Mrs. Dash Tomato, Basil & Garlic
    Butter cooking spray


Preheat Oven to 350 degrees

Cook red potatoes til they are tender.

While potatoes are cooking, dice onion and bell pepper, grate carrots if you didn't buy shredded carrots. (I'd recommend buying shredded)

Mash potatoes with margerine, milk, nutmeg, salt & pepper.

Saute onions, peppers & carrots in butter spray til partially soft. Add ground beef. Cook until veggies are soft & meet is browned through. Stir in beef broth, water (5 oz) and the remaining seasonings. Cook until broth is reduced. Stir once or twice during cooking.

Spoon the meat & veggie mixture into a baking dish, add potato mixture on top. Sprinkle with parmesan cheese. Bake until heated through.
