1 tbsp oil
1 lean 3 lb beef roast, corned beef roast or ham
6 medium onions peeled and halved
8 carrots, peeled and cut in half
1/2 a large cabbage cut in 4 wedges
1 large turnip, peeled and cut in 6 wedges
6 potatoes, peeled and cut in half
2 beef flavoured stock cubes
4 bay leaves
salt and pepper to taste
Stack vegetables on top of the meat in layers. Add more water if necessary. Return cover to pressure cooker and return to full pressure. Cook 3 minutes and let pressure come down slowly, or if using a pot bring to a boil and simmer for 15 to 20 mins till vegetables are cooked.
Carve meat and serve with vegetables and juices.
This is even better reheated the next day.
