Fire Roasted Salsa

Ingredients

    1 jalapeno pepper
    2 large medium-hot peppers, like poblano
    4 vine-ripe tomatoes (quality is important here--nothing grainy)
    1 cup cilantro
    2 Tb fresh cilantro
    1 Tb canola oil

Directions

Preheat grill.
If grill has non-stick coating, skewer tomatoes to make turning easier.
Brush tomatoes and peppers with oil. Grill for 10-12 minutes, or until skins have light charring.
Set aside until cool enough to handle. Finely chop ingredients. Runny tomato juice can be tossed to make thicker salsa, if desired. In that case, just use the pulp of the chopped fruit. Be careful when chopping the jalapeno, as it can cause cuts or sensitive skin to burn. Add ingredients to large bowl.
Finely chop cilantro and add it to peppers and tomatoes. Add apple cider vinegar and toss to mix. Cover bowl and refrigerate for at least one hour to allow tastes to blend.
