Steph2003's Broccoli & Cheese Casserole

Introduction

Number of Servings: 8

Ingredients

    1 cup uncooked white rice
    1 can Swanson's Natural Goodness Chicken Broth
    1 can Healthy Requests Cream of Chicken
    1 Small onion, diced
    1 bag frozen Broccoli, I use Bird's Eye
    8oz Light Velveeta Cheese

    Optional: You may also want to crush some Ritz crackers over the top, but don't forget to add the fat and calories for that!

Directions

Preheat oven to 350.
Spray 8x8 pan with cooking spray.


Boil rice in chicken broth until done.


Microwave frozen broccoli, until done.
Melt cheese in microwave, mix all ingredients together and pour into a baking dish.

Cover and Bake for 20-25 min.

Cut into 8 squares and enjoy!
