Turkey Pasta Bake with Spinach

Turkey Pasta Bake with Spinach

Ingredients

    1 pound lean ground Turkey, cooked
    28 oz. spaghetti sauce
    1 can diced tomatoes and gree chilies, drained
    1 cup sour cream
    16 oz. pasta of your choosing
    1/2 cup parmesan cheese, grated
    3 oz mozzeralla cheese
    1 cup frozen spinach, thawed
    italian seasonings
    1 tbsp pepper
    3 garlic cloves, diced
    1 cup onion, diced

Directions

Spray cooking pan with pam (or equivalent). In the same pan cook onions and garlic until onions are tender. Add turkey and make sure to cook throughly.
Once cooked add pepper and italian seasonings. Cook for 1 minute.
Add diced tomatoes and thawed spinach.
Cook for 1 more minute.
Add spaghetti sauce, sour cream and parmesan cheese. Let this simmer.
Cook pasta of your choice according to package. Drain and then combine with meat and sauce mixture.
Pour into a 13x9 baking dish.
top with mozzarella cheese
Bake in oven at 375 degrees for 25 minutes.
Serve with some whole wheat garlic bread ;-)

    Oh my goodness that was yummy! I used whole wheat pasta and fresh spinach instead of frozen. I also used the Italian Herb ground turkey breast instead of adding italian seasoning. The only ingredient I excluded was the gree chilies... My mom's allergic. It turned out fantastic! - 6/26/09

    This is AWESOME!! I used whole wheat penne pasta and cut up pieces of turkey from one that I roasted. It was a tad spicy, my husband and I liked it, but the kids complained about it. Next time I will cut up the spinach first and use plain diced tomatoes. - 2/2/09

    This was good my husband really loved it, I did it alittle different though, instead of ground turkey I took the casing off of the hot turkey sausge links and used that. I also added more spinach , I also used organic whole tomatoes and smushed em for the juice.. it was go good thanks for the recipe - 11/9/08

    This was fantastic!!! I did not add the sour cream or parmesan cheese (because we were out) and I thought it turned out great! My husband thought it was delicious and said the next day that he had been looking forward to the leftovers all day. Definitely a keeper! I will make this again. - 9/22/08

    I was pretty disappointed by how this one came out. I think I was expecting a lot out of this recipe because the ratings are so high. Neither my husband or I liked it very much. It was just ok and I won't be making it again. - 9/24/12

    I made this according to directions, using whole what pasta. It was sooo good and big portions. I cut it into 8 pieces and froze the rest for next week's lunch. Thank you for a great recipe! - 7/7/12

  • I loved it! I used whole wheat spaghetti, hot rotel and fat free yogurt instead of sour cream. It froze well too! Next time I'm adding mushrooms and zucchini. - 8/1/13

  • Just made this and couldn't wait to rave about it! The combination of the hot peppers with the creaminess of the sour cream is super. The only change I made was to add a quarter of a few mushrooms and bit of red and green pepper chopped to the onion sauté. - 7/26/13

  • Overall, this recipe is easy to make, delicious, and nutritious. I do make modifications though. I use whole grain pasta, use plain Greek yogurt instead of sour cream, use only parmesan cheese (mozzarella is just too caloric), and add lots sauteed veggies like zucchini, squash, mushrooms, etc. - 8/1/11
