Lasagna

Ingredients

    About 5 lasagna noodles
    About 1 handful of ziti noodles
    Approx. 1 lb. organic lean (90/10 or better) ground beef
    1 whole onion, chopped
    1 green pepper, seeded and chopped
    1 c. fat free ricotta cheese
    1 c. fat free cottage cheese
    1/2 c. grated parmesan cheese
    Approx. 3/4 c. grated part-skim mozzarella cheese
    1 egg, beaten
    Approx. 1 c. Healthy Choice Traditional Pasta Sauce
    To taste:
    salt, pepper, thyme, basil, oregano and parsley

Directions

Cook lasagna noodles according to package directions.
Brown ground beef in pan with onions, peppers. Drain. Add herbs, salt, and pepper to taste. (The above values might not be accurate.)
Mix FF ricotta, FF cottage cheese, parmesan cheese, 1/2 the mozarella cheese and egg in separate bowl.
Spread some sauce on bottom of pan. Layer noodles, cheese and beef and sauce until you run out of ingredients. Top with mozarella cheese.
(I like to use cooked ziti pasta as the last layer of lasagna noodles. It looks prettier.)
Bake, covered, in a 9 x 9" baking dish, at 375 degrees for about 40 minutes. Broil, uncovered, an additional 3 minutes or so to brown up the top of the lasagna.
I did this for 6 servings, because that seemed realistic to me, but if you make it into 9 servings ( 3 x 3" ) servings, it cuts the calories down to 288 and fat grams to about 16.
Serve hot, tastes delicious!
