Turkey Enchiladas

Introduction

A delicious way to enjoy the spice of Mexican without the fat and calories! A delicious way to enjoy the spice of Mexican without the fat and calories!
Number of Servings: 4

Ingredients

    5 oz Lean Ground Turkey Breast
    1 small potato diced
    2 small carrots diced
    1/2 a small onion diced
    1 cup Enchilada sauce, reserve 1/4 cup to pour over at the end
    1/2 cup low fat cheese, reserve 1/4 cup to sprinkle at the end
    8 fat free, 8 inch tortillas

    Toppings:
    A couple of tomatoes diced
    Low fat, or fat free sour cream
    Salsa
    Iceberg lettuce, shredded
    Chopped scallions

Directions

*Spray skillet with cooking oil, set at medium heat
*Break apart ground turkey into skillet
*add diced onions, potatoes, and carrots
*add black beans
*Stir often to prevent sticking
*Add 3/4 cup of enchilada sauce
*Stir in 1/4cup of shredded cheese
*cook until carrots and potatoes are tender
*Take a 1/4 cup of filling and place in center of tortilla; roll into a burrito shape
*Spray bottom of 9X9 inch baking pan, and place burrito into it
*Fill the remaining tortillas, and squish them into the pan
*Pour remaining enchilada sauce over enchiladas.
*sprinkle remaining cheese over enchiladas
*Place pan in a 400 degree oven for ten to fifteen minutes until cheese is melted and bubbley
*Serve immedatley with desired toppings.
