IntroductionServe as an appetizer or side dish. Serve as an appetizer or side dish.
1/2 cup chopped red pepper
1 - 15 oz can whole kernel corn, drained
1 large egg
1/2 cup nonfat milk
1 - 8.5 oz box of Jiffy Corn Muffin Mix
1/2 cup AP flour
1/2 tbsp kosher salt
1 tsp fresh ground black pepper
Spray griddle or pan preheated to medium heat with nonstick spray, or brushed with margarine.
Using a large spoon, dollop enough mixture onto griddle to make two batches of eight fritters.
Cook like pancakes, until golden brown on the bottom and flip until gold brown on second side.
Sprinkle with additional salt to taste and serve with butter/margarine or sour cream.
