Introduction

Yummy, Creamy Steel Cut Oatmeal topped with mixed berries, perfect when having a sweet carb craving! Yummy, Creamy Steel Cut Oatmeal topped with mixed berries, perfect when having a sweet carb craving!
Number of Servings: 4

Ingredients

    3.5 cups Water
    1/2 cup Soy Milk, Vanilla w/Fiber
    1 Cinnamon Stick
    1 cup Steel Cut Oatmeal (I use Trader Joe's)
    1 Tbs Butter, divided
    1 Tbs Brown Sugar, divided
    1 cup Mixed Berries (Strawberries, Blueberries, Blackberries), divided

Directions

1. Bring Water to a boil with Cinnamon Stick, add Soy Milk and return to boil
2. Slowly add Oatmeal, stirring occassionally until oatmeal thickens, about 5 minutes
3. Simmer for 30 minutes, stirring occassionally
4. Divide into 4 servings, top each with about 1 tsp Butter, 1 tsp Brown Sugar & 1/4 cup Mixed Berries.
