IntroductionMy 3 year old loves it! My 3 year old loves it!
About 12 oz of carrots, chopped into 1 " pieces
2 sweet potatoes, peeled and chopped into 1" pieces
1.5 tsp Olive Oil
.5 tsp Salt
1 tbsp Butter, unsalted
1 tbsp Maple Syrup
2. Toss carrots and sweet potatoes in oil, and salt. Spread into single layer on a rimmed baking sheet and roast 10 minutes.
3. While carrots continue to roast, brown butter.
4. Off heat, stir in maple syrup and drizzle mixture over carrots.
5. Continue roasting about 8 minutes longer, stirring occasionally until veggies are browned and tender.
Serves 4 as a side dish or 2 as a main dish
