Rice Pilaf with Sweet Potatoes and black beans

Ingredients

    1 packacloge Kashi 7 whole grain pilaf
    1 medic ium onion (chopped)
    3 garlic cloves
    2 cups chicken broth
    1 can black beans
    3 small sweet potatoes (peeled and cubed)
    thyme and pepper

Directions

saute onion and garlic until soft. Add pilaf, pepper, thyme,broth and black beans (drained). Cook following pilaf instructions (aprox 30 minutes). Half way through cooking time add sweet potatoes. I find if you add them right away they get too soft. or you could oven roast potatoes and add them to the dish after it is cooked.
