Introduction

This is my idea of "fast food". Prep time is about 10 minutes (including marinating). I originally saw Rachael Ray make this a few years ago, and this is now a regular request in my kitchen. This is my idea of "fast food". Prep time is about 10 minutes (including marinating). I originally saw Rachael Ray make this a few years ago, and this is now a regular request in my kitchen.

Ingredients

    2 chicken breast filets (no skin) about 6 oz. each
    1 Tbsp. Olive Oil
    Good dash of balsamic (about 1/2 TbspP
    1 Sprig fresh rosemary, chopped fine
    1-2 cloves garlic, finely minced or chopped
    kosher salt & pepper

Directions

Wash & dry chicken breasts.
In a shallow dish, blend oil, balsamic with the rosemary and garlic.
Coat both sides of chicken and allow to marinate;turn once

Heat a non-stick skillet to medium-high.
Sear meat evenly one 1 side (approx 3 min)
then turn over and sear.
Allow to cook for approx 15 minutes or until juices run clear (about 180F)
Allow to rest for a few minutes.
Slice on the diagonal and serve.

Our favorite side dish is Brown Butter and Balsamic Ravioli with fresh parmesan cheese and fresh chopped parsely.
