Surprise! High fiber pizza

Introduction

Pizza I would eat when doing "Phase 1" of Fat Smash. Contains no white or wheat flour.
High in fiber.

Number of Servings: 4

Ingredients

    Crust:

    1 C Oatmeal
    2/3 C Chickpeas
    1 Egg white
    1 tsp EVOO
    Parsley, Oregano, Basil, Rosemary, Garlic Powder (to taste)

    Toppings:

    1/2 C Marinara Sauce
    1/2 C Sliced Mushrooms
    1/4 C Diced Red Onions
    1/4 C Sliced Black olives
    1/4 C Mozzarella Part Skim
    Black pepper to taste

Directions

Pre-heat oven 400 degrees.

1. Places oats into food processor/blender. Grind until fine powder (Oat Flour).
2. Puree chickpeas in blender. Use a little water from can if necessary. (Mixture should be moist, not watery.)
3. In a bowl, combine oat flour, chickpea puree, egg white, EVOO, and spices.
4. Mix until dough-like consistency. Not too wet, not too dry. (You can hold it in your hands with minimal sticking)
5. Press dough onto a cookie sheet. About 1/4" thick. (I usually form into a rectangle).
6. Bake in 400 degree oven until edges of crust are lightly browned, cracked, and lifting from cookie sheet.
7. Spread 1/2 C of Marinara sauce evenly over crust.
8. Top with fresh veggies.
9. Sprinkle pepper and spices for flavor.
10. Add cheese.
11. Place pizza under broiler to cook toppings. (just a few minutes)

Yields 4 servings (when cut into quarters)
