Ingredients

    1 lb frozen chopped spinach
    1 lb whole milk ricotta cheese
    2 cloves garlic minced
    4 oz heavy cream
    4 tbsp grated parmesan cheese

Directions

Cook frozen spinach and garlic in some water together till hot through. Drain. Add ricotta, parmesan, and heavy cream. Cook until creamy and hot.
Serve over cooked pasta. Add more parmesan on top if desired.

You can vary the amounts to your taste. You can make it lower fat with part skim ricotta. Leftovers warm well in microwave.
