3 egg whites, beaten (or egg replacer for 3 egg whites)
1/2 cup apple sauce, unsweatened
1/2 cup skim milk (or low fat soy milk)
1/2 cup water
1/4 cup crude bran (Miller's Bran)
1/2 cup whole wheat flour
1/2 cup soy flour
1 tbs baking powder
1 tsp cinnamon
Spray a non-stick pan or griddle with cooking spray. Pour about 1/3 cup batter into pan for each pancake and cook on both sides. Respray with cooking spray when adding more batter.
Can be made ahead and kept in refrigerator and then reheated in a microwave.
Makes 8 pancakes.
