Raw Beet Salad

Ingredients

    Ingredients:


    5 raw Beets, peeled
    Juice of 1 Lemon
    2 tbsp Olive Oil
    2 tsp grainy Dijon Mustard
    2 tsp Splenda
    2 tbsp fresh chopped Dill weed

Directions

Peel beets and grate finely using a food processer. It will come out looking like lovely thin red spaghetti - so pretty.

Wisk lemon juice, olive oil, mustard and splenda until well blended - pour over beets and toss.

Refridgerate until ready to serve... super the next day too.

makes 5 - 1/2 cup servings
