Jenn's Almost Guitless Chocolate Zucchini Bread

Introduction

A scrumptous low-fat, low-sugar treat! The applesauce and oat flour make this a dense, but moist loaf. For a really chocolatey treat, add another 1/2 cup chocolate chips to the dough! Ingredients

    1 1/4 cups whole wheat flour
    1 1/4 cups whole grain oat flour
    1/2 cup cocoa powder
    1 1/2 tsp baking powder
    1 tsp baking soda
    1 tsp cinnamon
    3/4 tsp salt
    1 1/2 cup sucralose (Splenda)
    3 eggs
    1 cup unsweetened applesauce
    2 tsp vanilla
    2 cups packed, grated zuccini
    3/4 cup chocolate chips, separated

Directions

Preheat oven to 350 degrees. Spray 2 regular loaf pans or 4 mini loaf pans with nonstick spray.

In large bowl combine flours, cocoa, baking powder, baking soda, cinnamon and salt. Set aside.

In a medium bowl, whisk together sugar, egg applesauce, and vanilla. Stir in zucchini.

Add wet ingredients to dry ingredients. Stir until just moistened. Fold in 1/2 cup chocolate chips. Spread batter evenly in prepared pans.

Bake for 40 minutes, sprinkle 1/4 cup chips on top. Bake for another 10 minutes, or until toothpick in center of loaf comes out clean.

Cool in pans for 5 minutes. Remove from pans and let cool on wire rack before serving.

Makes 24 slices
