Tom's Chicken Parm

Introduction

Adapted from his mom's cookbook Adapted from his mom's cookbook
Number of Servings: 10

Ingredients

    5 chicken breasts - sliced in half longwase
    1 cup of bread crumbs
    1/2 cup of veg. oil
    1/2 cup of parmesean
    16 oz part skim mozarella
    2 cups of plain - self-seasoned- tomato sauce
    2 eggs

Directions

Heat large skillet to medium. When hot add oil. Dip chicken in egg then in breadcrumb. Fry chicken for 3 minutes on each side. Remove from pan and let sit on paper toweling. Fry all chicken. Meanwhile, heat sauce and add fresh or dried herbs to taste. Slice mozarella cheese. In square baking dish drizzle a little sauce on bottom. Begin to layer: chicken - mozarella - parmesean - sauce. Repeat to top. Back at 350 until cheese is melted.
