Mellow Shrimp Pasta Salad

Introduction

This delicate medley of fresh vegetables, shrimp, and pasta is lightly seasoned with fresh chives and lemon juice. This delicate medley of fresh vegetables, shrimp, and pasta is lightly seasoned with fresh chives and lemon juice.

Ingredients

    5 cups cooked multi grain Barilla pasta
    24 oz wild caught Gulf shrimp
    1 cup light mayonnaise
    4 medium tomatoes
    1 bunch fresh asparagus (about 1 to 1.5 lbs)
    1.5 cups mini baby carrots
    juice of 2 fresh lemons
    handful of fresh chives
    4 oz white wine
    salt and pepper to taste
    optional: parmesan or other grated cheese

Directions

Slice the tomatoes in half, then squeeze each half to remove the seeds and most of the liquid. Dice these into medium to large chunks. Break up the asparagus into bite size pieces, add to microwave safe dish with 2 tablespoons water, and microwave on high for 3 minutes (1100 watt oven). Drain the water. Shell the shrimp, and sautee them on medium high in the white wine in a nonstick skillet until they become opaque and pink, about 3-4 minutes. Discard the leftover cooking liquid, or save for another use. Chop each shrimp into small bite size pieces. Chop the chives into small pieces.

Mix all ingredients together, and chill for several hours. Optional: sprinkle grate parmesan or other cheese on top before serving. (calories from cheese not included)

Each serving is 2 cups.
