Introduction

This cake combines my favourite flavours in an easy to make bundt cake that even the kids love! As is it is delicious but you can drizzle some cream cheese icing drizzle on it to kick it up a notch for company! Ingredients

    Egg, fresh, 1 large
    100 % Egg whites per 1/4 cup
    Carrots, raw, 250 grams
    NN Sultana Raisins Per 1/4 cup
    No Name Pecan pieces 100 g
    NN Crushed Pineapple in pineapple juice - 2.278 cup /1 can
    *Bob's Red Mill Whole Ground Flaxseed Meal, 3 Tbsp.
    Unsweetened Medium desiccated Coconut, 4 tbsp
    Cinnamon, ground, 1 tbsp
    Nutmeg, ground, 0.5 tbsp
    Duncan Hines Moist De Luxe White cake mix , 515 gram(s) / 1 box(remove)
    Icing Sugar (UK), 3 g
    2 Tbsp Canola oil

Directions

Preheat oven to 325 - 350 F
Grate 250 g of Carrots
Add chopped nuts, pineapple, Canola oil eggs and ise a hand held blender to puree partly , ( this stops the cake from being too heavy)
leave some chunky if you wish or blend till smooth. ( your choice) I like it slightly chunky
add rest of ingredients and use a hand held mixer to mix according to Duncan Hines box instructions, Pour into prepared bund cake pan and bake approx 50 min - hour in preheated oven
