Number of Servings: 6
1 Head Cauliflower
1 1/2 Tbl. Cornstarch
1 3/4 cup Skim Milk
1/2 cup 2% Cheddar Cheese
1/2 cup Diced Onions
1/4 cup Parmesan Cheese, grated
1/8 tsp. Dry Mustard
1/8 tsp. Black Pepper
1/2 cup Breadcrumbs, plain
Steam head of Cauliflower till soft. Break apart into bite size pieces. Set aside. In saucepan, combine Cornstarch & Skim Milk & diced Onions and cook over medium heat till thickened. Add Cheddar Cheese, Parmesan Cheese, Dry Mustard & Pepper. Place steamed cauliflower in casserole dish & pour milk mixture over cauliflower. Sprinkle Breadcrumbs over top. Broil for 5 minutes till breadcrumbs start to brown.
