Introduction

We modified this from a recipe for Caribbean Shrimp Spread from Pillsbury Potlucks June 2008 book. We decided we didn't need any type of spread but could make this recipe into a nice salad. We modified this from a recipe for Caribbean Shrimp Spread from Pillsbury Potlucks June 2008 book. We decided we didn't need any type of spread but could make this recipe into a nice salad.
Number of Servings: 2

Ingredients

    1 teaspoon Caribbean Jerk Seasoning
    1/4 teaspooon grated lime peel
    Juice from 1 lime - approx 2 Tbsp.
    1/2 pound shrimp cooked, peeled, deveined, tails removed, chopped
    4 medium green onions, chopped (1/4 cup)
    2 Tablespoons chopped red bell pepper
    4 cups Fresh Express Field Greens

Directions

1. Cook shrimp, peel, devein, remove tails and chop.

2. Combine all ingredients and marinate shrimp and vegetables for 15 minutes.

3. Serve on top of Salad Mix.
