Introduction

I made this in the microwave with leftover chicken to fill veggie tortillas, but delicious alone too. This recipe is for just 2 servings so adjust quantities to make more. Ingredients

    Chicken Breast, no skin, 1.0 breast, bone and skin removed
    Kraft Mayo Light Mayonnaise (Mayo), 1 tbsp
    Salsa, .5 cup
    Cabbage, fresh, 1 cup, shredded
    Salt to taste

Directions

Use leftover cooked chicken breast or cook fresh chicken breast in pan sprayed with cooking spray. When cooked, chop into small pieces (1/2 " chunks) . Mix mayonnaise and salsa in a small bowl. If cooking from fresh chicken, add mayo mixture and cabbage to pan. Cover and cook for a couple of minutes until cabbage is crisp tender. If cooking from leftovers, just mix the salsa and mayo with the chopped chicken. Add cabbage and cover loosely. Microwave for about 3 to 4 minutes until cabbage is crisp tender. Mix thoroughly and eat as is, over rice or use as filling for tortillas!
