Lentils & Cabbage w/ Vinegar Dijon Dressing

Ingredients

    1/2 c. lentils, uncooked and soaked
    1 c. water
    4 c. cabbage, shredded

    Dressing:
    3 cloves garlic, minced
    3 T. red wine vinegar
    2 T. Dijon Mustard
    1/2 t. ground pepper

Directions

Place lentils in saucepan with water and bring to a boil. Reduce heat and simmer until tender, 30 or 40 minutes. While lentils are cooking mix dressing ingredients. Steam cabbage just long enough to make it tender. Drain the lentils. Mix cabbage and lentils and toss with dressing. Serve immediately.

Makes 4 servings.

  • I steamed the cabbage. I had about 1T raw onion that I saut√© in 1T bacon drippings added the garlic dumped in cabbage and liquid. Added the "dressing" to pan. Served like a warm salad. very yummy. - 1/15/09
