Sweet Sweet Potatoes



A nice kick of Vitamin A and Potassium! A nice kick of Vitamin A and Potassium!
Number of Servings: 6


    3 large sweet potatoes - enough for 3 cups once cooked
    2 tsp freshly grated ginger root
    3 tsp Splenda
    2/3 cup low fat vanilla soy milk (or Non fat Evap if you prefer)


1. Prick sweet potatoes with a fork in several places. Microwave on High until tender all the way to the center, 10 to 15 minutes. (Alternatively, place in a baking dish and bake at 425 degrees F until tender all the way to the center, about 1 hour.)

2. When cool 3 cups of the sweet potatoes . Add Soya milk, ginger and Splenda; stir well.

Reheat in the microwave for 1 to 2 minutes, or in the oven for 8 to 10 minutes. Serve warm.

Makes 6 - 3/4 cup servings
