Orange-Glazed Carrot Ribbons

A sweet and tasty spin on cooked carrots. Makes an excellent side dish at 89 calories per serving.

Number of Servings: 6

Ingredients

    1 lb of raw, whole carrots (baby carrots will not work!)
    1 cup orange juice
    2 tbsp packed brown sugar
    1 tbsp margarine
    1 tbsp honey
    a splash of lemon juice

Directions

Peel the carrots lengthwise into long, ribbon-like pieces, until you have about 4 cups. Cook in a large saucepan of boiling, salted water for about 2 minutes. Drain and pat the carrots dry.

Stir orange juice and brown sugar together in a heavy skillet, allowing sugar to dissolve. Boil the contents until reduced to scant .5 cups (this takes about 5 minutes.) Add carrots and butter to the mixture and simmer until the carrots have absorbed most of the orange mixture (another 5 minutes.)

Add the honey and lemon juice, mix gently, and season to taste (I used garlic salt, pepper, dill, and cilantro.) Put in serving dish and sprinkle with chives.

Makes about 6 servings of 2/3 cup each.
