We have a large family and this is a long time favorite, quick and easy to prepare and easy to change to suit your mood!

Add some crushed red pepper when cooking chicken if you like some heat.

Add some crushed red pepper when cooking chicken if you like some heat.

Number of Servings: 15

Ingredients

    1.25 pounds boneless skinless chicken breast cut into cubes
    2 cups sliced onions
    1 clove minced garlic
    2 Tbs Canola Oil
    2 Cups uncooked white rice
    2 Cups fat free chicken broth
    2 Cups Water
    2 Cups canned diced tomatoes
    2 Cups kidney beans
    10 oz frozen vegetables

Directions

Add oil to a 14 inch, deep skillet (a large pot with a cover will work as well).

Once heated, add chicken and saute until no longer pink.

Add garlic and onions and saute until translucent.

Add DRY rice and saute for 1 minute.

Add broth, water, tomatoes and kidney beans, stir and bring to a boil.

Reduce heat, cover and simmer for 20 minutes or until rice is cooked.

Remove from heat, mix in frozen vegetables, allow to stand for 3 minutes and serve.

Makes 15 - 1 cup servings
