Apple Bread

Introduction

Delicious, moist, low fat bread with apples and nuts. Delicious, moist, low fat bread with apples and nuts.
Number of Servings: 14

Ingredients

    1.5 cups flour
    1 t ground cinnamon
    1/2 t baking soda
    1/2 t salt
    1/4 t baking powder
    1/4 t ground nutmeg
    1 beaten egg
    1 cup sugar
    1.5 cup finely shredded, peeled apple
    1/4 cup unsweetened applesauce
    1/2 cup chopped walnuts, toasted (or pecans if you prefer, but nutrition is for walnuts)

Directions

Spray a loaf pan with nonstick cooking spray, set aside. In a medium bowl, combine the flour, cinnamon, baking soda, salt, baking powder, and nutmeg. Make a well in center of flour mixture; set aside.
In another medium bowl combine egg, sugar, apple, and applesauce. Add apple mixture all at once to flour mixture. Stir just until moistened. Fold in nuts. Spoon batter into prepared pan.
Bake in a 350 degree oven for 50 to 55 minutes or until a wooden toothpick inserted near center comes out clean. Cool in pan on a wire rack for 10 minutes. Remove from pan. Cool completely on a wire rack. Wrap and store overnight before slicing.
Note: to toast the nuts, spread them on a cookie sheet and put them in a 350 degree oven for 5 - 10 minutes, stirring and checking them every few minutes to keep them from burning. Walnuts seem to take longer to toast than pecans; it took me about 10 minutes to toast the walnuts, and when I toasted pecans a few days ago for a different recipe, it only took about 5-7 minutes.
Makes 14 servings, 1 slice per serving. The cookbook I got this from actually said 16 servings but I tried and could only do 14. Besides, I substituted the oil with applesauce, so it saved those extra calories. The 16 servings with oil was 147 calories per serving, and my 14 servings with applesauce is 148 calories. The cookbook's recipe had 6g of fat and mine has 3.4g of fat, and bigger servings!
