IntroductionI like brown rice and I wanted to make a recipe that was CORE on the weight watchers program. I like brown rice and I wanted to make a recipe that was CORE on the weight watchers program.
4 cups cooked and cooled brown nice (I bought a quart of it from the chinese restaurant)
1 bunch of scallions chopped
1/2 of a seedless cucumber (you know one of those long ones wrapped in plastic) Leave skin on
1 chopped green or red pepper
1/2 cup crumbled fat free feta
1/2 cup chopped kalamata olives
fresh cracked sea salt and black pepper
2 parts olive oil to 1 part lemon juice to taste to make it a little wet 4 tblsp oil to 2 tblsp lemon
