French Toast Muffins

Introduction

It never fails... no matter how early I get out of bed, I'm always in a mad rush to get out the door on time. I threw this together one such morning and found them delightful-- quick, portable, tasty... and just filling enough to start my day right! I threw this together one such morning and found them delightful-- quick, portable, tasty... and just filling enough to start my day right!

Ingredients

    Savory:
    1 Wheat English Muffin (Orroweat brand is my favorite)
    1/2 cup Southwest EggBeaters
    Pinch of No-Salt Seasoning (or seasoning of your choice)
    I Can't Believe It's Not Butter Spray
    Salsa to top (optional)

    Sweet:
    1 Raisin or Cinnamon English Muffin
    1/4 cup plain EggBeaters
    ICBINB Spray
    pinch Powdered Sugar (optional)

Directions

Split an English muffin and split the Eggbeaters between the 2 halves -- just drizzle it on. Sprinkle with seasoning, if desired. Let it absorb for a few minutes while you rush to blow-dry your hair. :)

Throw in on the Foreman grill or in a skillet, egg-side down, and cook for a few minutes until done to your liking. I leave mine on for about 5 minutes. Spray with ICBINB spray and wrap it up to go.

The Southwest Egg Beaters are great topped with a little salsa, although this definitely makes them less portable. I've also made these with raisin muffins and used plain Egg Beaters. Sprinkle these with a tiny bit of powdered sugar. Divine!
