Sunshine Muffins

Introduction

Make these on Saturday and freeze for use the rest of the week. Make these on Saturday and freeze for use the rest of the week.
Number of Servings: 6

Ingredients

    Egg, fresh, 6 large
    Water, 6 Tbsp.
    Onions, raw, 0.5 cup, chopped
    Green Peppers (bell peppers), 0.5 cup, chopped
    *Peppers, sweet, red, fresh, 0.5 cup, chopped
    English muffins, Thomas' English Muffin, 6
    Bacon, 4 medium slices, cooked and crumbled

Directions

Wisk eggs and water together, add chopped onions and peppers together. Meanwhile put 4 slices of bacon in the microwave and cook about 6 minutes until crisp, poor off grease and rest on paper towel. Spray a 9 x 13 glass dish with and poor in egg mixture. Drop crumbled bacon on top and bake at 375 for about 20-25 minutes until eggs are set. Cut into 6 servings and place one serving on english muffin.

Place 1 muffin in small freezer bag. Microwave when ready to eat.
