Introduction

This egg dish, made in muffin tins can be served on an English Muffin for a quick breakfast sandwich, or served along with fruit or salad as a main dish. This egg dish, made in muffin tins can be served on an English Muffin for a quick breakfast sandwich, or served along with fruit or salad as a main dish.
Number of Servings: 12

Ingredients

    1 carton egg substitute
    6 slices ham (30 calories per slice) diced
    3 oz grated mozzarella cheese
    1 large bell pepper diced (use whatever color you like)
    1 large tomato, diced

Directions

Preheat oven to 400 degrees.

Mix all ingredients together. Using a measuring cup, scoop approximately 1/2 C of mixture into each muffin tin. (Should fill 12 tins) Bake for 20 minutes or until eggs are set.

This can be frozen and microwaved for individual servings.

If you prefer vegetarian, substitute more veggies instead of the ham.
