Introduction

This recipe came from a co-worker named Deana, the original recipe is the best carrot cake I've ever had, so I decided trying to lighten it up a bit. This makes a 3 layer cake. Number of Servings: 16

Ingredients

    2 cups plain flour
    2 tsp. baking soda
    1 tsp. baking powder
    1 tsp. salt
    2 tsp. cinnamon
    3/4 cup sugar
    1 cup splenda
    1 tsp vanilla
    2 cups grated carrots
    1 cup crushed pineapple
    1 can Sprite Zero

    Optional: 1 cup shredded coconut, or 1 cup chopped pecans. (not in nutritional info.)

Directions

1. Combine sugar, splenda, sprite, and vanilla- beat until smooth
2. Add flour, cinnamon, soda, baking powder, and salt- beat well
3. Stir in carrots & pineapple, (and other optional ingredients, if used)
4. Put in 3 round cake pans (sprayed and floured)
5. Bake at 350 until done- about 20-22 minutes (If using a sheet cake pan, 30-32 minutes)
6. Cool and frost between layers and on top. Sprinkle with chopped nuts.
