Chile Verde Stew

Introduction

Spicy New Mexican Green Chile Stew Spicy New Mexican Green Chile Stew
Number of Servings: 6

Ingredients

    8 oz. center cut pork chops, trimmed and cubed
    1/2 c. chopped green chiles (anaheim)
    1 can chopped tomatoes w/juice
    1 can black beans, drained and rinsed
    1 can chicken broth
    1 small onion, chopped
    1 large carrot, peeled and chopped
    2 garlic cloves, chopped
    fresh oregano (dried is ok, too)
    1 t. olive oil

Directions

Heat pan with olive oil. Add pork and garlic and cook for about 5 minutes, or until pork is seared. Add onion, carrot and salt. Cook until onions are transluscent and pork is tender and cooked through. Add beans, tomatoes, oregano and broth and bring to a boil. Cover and simmer for 15-20 minutes. Serve with tortilla or low fat tortilla chips.
