IntroductionSouth-western-ey black beans in smokey-spicy sauce.
South-western-ey black beans in smokey-spicy sauce.
1- 15 oz can black beans, drained and rinsed.
1 bay leaf
3 cups cold water
1 large onion, peeled and halved
salt and pepper
1 cup of diced onion
4 cloves minced garlic
2 chipotle peppers (canned in Adobo sauce)
2T reserved Adobo Sauce
2T tomato paste
-Combine the beans, cold water, halved onion, bay leaf, salt and pepper in a saucepan. Bring to a boil for 1 minute, and reduce heat and simmer for 40 minutes. Remove onion and bay leaf- discard them.
-Meanwhile, saute the onion and garlic till soft and garlic in non-fat cooking spray. Stir in chopped chipotles and adobo sauce and simmer 30 seconds, remove from heat and blend.
-Combing the beans and sauce to coat and serve immediately.
