Green Beans & Fresh Tomatoes

Introduction

A great, low-cal side dish! A great, low-cal side dish!
Number of Servings: 2

Ingredients

    2 sprays olive oil cooking spray
    2 cup green snap beans, trimmed
    1cup grape tomatoes, or cherry tomatoes, cut in half (or quartered, if large)
    1/2 Tbls. Balsamic Vinegar
    2 Tbls. basil, fresh, cut into ribbons, divided
    1 tsp minced garlic, or less to taste
    salt and pepper to taste

Directions

1. Spray preheated pan over medium heat.
2. Add snap peas and saute until lightly golden brown.
3. Meanwhile, in a bowl, mix tomatoes, vinegar, garlic, salt and pepper.
4. When beans are browned, add tomatoes and mix until warm. Serve warm or chilled.

Can add feta or mozzarella if desired.
